La 1 kg  de carne, ¼ seu gros și curățat de piele. Carnea, împreună cu seul, se  trece de două ori prin mașina de tocat. Se adaugă în carne miez de  franzelă (de mărimea unei lămâi), muiat în mujdei de usturoi, sare, o  linguriță de mirodenii: enibahar, chimen (dacă vrei), piper și o  jumatate linguriță bicarbonat. Framanti, pana se face o pasta omogena.  Uzi cu apa un fund de lemn si palmele. Sucesti cate o bucata pe masa  pana obtii forma cilindrica stiuta. Tai in bucati potrivite si-i asezi  umezi pe-o farfurie. Ii pui la rece cateva ore. Pui gratarul incins, pe  care ai asezat un rand de mititei, la foc moale. Cat stau la foc, ii  invartesti mereu, pana se intaresc. Dupa ce s-au prajit o serie, se  servesc in vas acoperit si incalzit (altfel se sleiesc din cauza  seului). In timp ce se consuma o serie, se pune la foc seria urmatoare. Despre reteta de Cozonaci se pare ca a avut o apriga disputa referitoare la cele 50 de oua recomandate pentru 1kg.de faina.&lt;br /&gt;Lucrurile se petreceau in 1933 la Adevarul literar si artistic, unde a publicat reteta. color: rgb(255, 153, 255);"&gt;pate din ficatei de pui.&lt;/span&gt;&lt;br /&gt;Reteta ar fi:&lt;br /&gt;si se pun mirodeniile.&lt;br /&gt;500gr.ficat proaspat de pui&lt;br /&gt;1/2ceapa mica&lt;br /&gt;200gr.unt&lt;br /&gt;sare, piper,nucusoara rasa&lt;br /&gt;&lt;br /&gt;Se punee la calit ceapa tocata in unt cat o nuca.Se adauga ficateii si se calesc.sa nu se rumeneasca tare.Se lasa un minut pe foc mic.&lt;br /&gt;se stinge cu jumatate pahar apa si se mai lasa la fiert un minut.&lt;br /&gt;Se freaca bine cu blenderul-stik pana devine o pasta.cat este inca calda se adauga restul de unt taiat bucatele . Sunt nedietetici dar vor iesi mai gustosi.&lt;br /&gt; Am avut un purcel mic de 4 luni, greutate 30 de kg.A fost taiat l a inceputul lunii si am pus carnea la congelator.Am facut si cativa carnati : jumatate carne porc, jumatate carne vitel.Am facut caltabos pt. aperitiv. Az  i am dat peste o  reteta pe un site frantzuzesc de Lasagna cu legume.&lt;br /&gt;Am incercat-o, si ca de obicei nu aveam foi.Am facut-o cu taitei subtiri, pusi in straturi.          Retzeta este astfel:&lt;br /&gt;&lt;span style="font-style: italic;"&gt;--Umplutura&lt;/span&gt;:&lt;br /&gt;1 vanata mijlocie,1   dovlecel, 1 ardei gras rosu, 2-3 rosii, 2 linguri pasta de rosii, 1 ceapa ,2 morcovi  mici, 2 catei de usturoi,patrunjel verdesi mararverde,&lt;br /&gt;1/4Kg. taitei sau foi de lasagna, ulei , cascaval de oii ras (parmezan), sare,piper, boia iute de ardei cate o linguritza.&lt;br /&gt;Am facut sosul de rosii .Am fiert taitzeii. Am prajit legumele curatate si taiate rondele.Am asezat in tava un strat de sos si ulei Am pus a treia parte din taitei , am presarat cu cascaval ras, am asezat vinetele prajite , apoi am acoperit cu sos ,iar un strat taitei ,am acoperit cu dovlecel si ardei prajiti , cascaval rs,etc. Ultimul strat de taitei amestecati cu sos ,i-am presarat cu cascaval           ras, verdeturi taiate. Am turnat peste tot cateva linguri de sos si usturoi taiat marunt. Vrem sa facem suc sau cidru. Nu avem un aparat automate de stors. Storcatoarele de fructe electrice sunt foarte fiabile si au capacitate mica. Am cumparat unul pentru a fi la Vizantea,marca Phillips. Este bun , separa bine pulpa de zeama. &lt;![endif]--&gt;  &lt;p class="MsoNormal" style=""&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:100%;"&gt;Soldatul Svejk, fabulosul personaj al lui Hasek, trecea drept ţicnit, deoarece era singurul om normal într-o lume întoarsă cu fundu-n sus.&lt;br /&gt;Pentru compania lui Svejk, care aştepta de trei zile îndelung nemâncată să fiarbă o vacă bătrână, primul război mondial avea să se periodizeze altfel decât pentru istorici. Prima parte se termina cu foamea din ziua în care fusese pusă vaca în cazan, iar a doua parte începea cu o foame şi mai mare, întrucât, de bătrână şi aţoasă ce era, vaca se făcuse porţelan.&lt;br /&gt;&lt;/span&gt; &lt;span style="font-size:100%;"&gt;&lt;br /&gt;În familia mea, păstrând cum se zice proporţiile, prima parte a vieţii noastre democratice a luat sfârşit alaltăieri, adică în ziua în care am primit în dar o "găină ecologică", de la ţară, a doua parte începând cu discuţia despre "adevărata găină".&lt;br /&gt;Şi cu fabuloasa concluzie că ne putem tâmpi chiar şi din mai puţin.&lt;br /&gt;&lt;br /&gt;Am întors găina "de curte" pe toate părţile, minunându-mă de grăsimea ei aurie şi tare, de carnea ei roşie şi grea, de tot ce o făcea să nu semene cu puii văroşi şi umflaţi cu apă de la Mall. Doar că n-am pus şi de un dans tribal în jurul găinii de două kile, hrănită cu grăunţe şi râme de ogradă, atât de marcaţi eram de eveniment.&lt;br /&gt;&lt;br /&gt;Lucrurile s-au complicat şi mai mult când ne-am întrebat cum o vom găti. Doar nu era s-o jignim cu nişte ardei graşi de sinteză şi morcovi evreieşti produşi în bazine energizante. Nici n-o puteam pune pur şi simplu la cuptor, fiindcă nu ştiam ce urma să se întâmple. Dar sunt fel de fel de tehnici: de asezare, dospire,chiar  incepand cu alegerea ingredientelor.
